The "lost art" of fermentation

What sets us apart from 99.9% of hot sauces currently on the market that use the (in our humble opinion) "LAZY", quick-turnover "Blend-Cook-Bottle" approach that involves tossing a bunch of peppers and other ingredients into a pot, blending it and then cooking it... then packing it full of preservatives like vinegars and then additional chemicals prior to bottling in order to give it a shelf life and increase production... We go the extra mile and provide the required patience/time required to allow our products to go through a full lacto-fermentation process that allows those ingredients and flavors to truly mesh together and create a final-bottled product that has a natural 2-3 year shelf life without needing to add unnecessary and unhealthy preservatives and chemicals... There is no other way to artificially match the flavor and depth attained from a truly CRAFT-FERMENTED hot sauce. The Butte Sauce Co takes great pride in providing this extra step that is now nearly a "LOST ART".
